Pork chops stuffed with spinach and Gorgonzola cheese

I totally got this recipe online and made it my own! It was DELISH! and it's pretty easy to make too. I used Gorgonzola cheese instead of Goat cheese.
Recipe:
2 thick cut pork chops
1 bag of frozen spinach (thawed and squeeze excess water)
1 tomato freshly diced
2 garlic cloves (minced)
1/2 Onion (optional)
1 tablespoon Olive Oil
1 1/2 cups chicken broth
1/4 cup Gorgonzola cheese
1 full lemon squeezed
Salt and pepper
Directions:
Cook stuffing; Add garlic to hot skillet and cook until fragrant, next add tomato, onion, and spinach and season to taste. Cook until combined. Next remove to a mixing bowl and add Gorgonazla cheese. Once all mixed together, cut pork chops gentley in the middle making a pocket. Stuff pork chops with stuffing and season them. Warm remaining olive oil in the skillet, when hot, add the pork and cook until golden brown through (about 4 mins. each side). Next, when done cooking, remove pork to a plate and cover to reserve heat while making pouring sauce. Add chicken broth and lemon to the skillet heat, scrape up the brown bits from the bottom of the pan while simmering. Once nice and hot serve your chops and pour sauce over. I also made a bed of white rice!
