Roasted tomato caprese salad

If you're a tomato lover and mozzarella fanatic then this is for you. I love pasta salads especially when it's cooked with a refreshing balsamic vingarette. I found this on an Instagram recipe account I follow and thought it looked yummy to make!
Recipe:
1 lb. Cherry or grape tomatoes
8 oz. Macaroni pasta
2 Tbsp Balsamic Vinegar
3 Tbsp Olive Oil
1 Tsp Can sugar
1 Shallot
2 Garlic cloves, minced
1 Tbsp minced Oregano
Fresh mozarella pearls
2 Tbsp Basil leaves, minced
Salt and pepper
Directions:
Cut tomatoes in halves and leave some whole. Place on foil lined sheet pan. Drizzles with olive oil
just enough to coat. Season with generous amount of salt and pepper. Roast for 15 mins at 425 degress. Tomatoes will get wrinkled and look like they're about to brust, remove and let cool to room-temperature. Meanwhile, cook macaroni pasta..While pasta is cooking make the balsamic vingarette. To a large sauce pan add balsamic vingear, olive oil, shallot, garlic and oregano until combined. Remove pasta from heat and drain and run under cool water (to stop them from over cooking) return to pot. Toss the balsamic vinaigrette and stir in roasted tomatoes and add mozarella pearls and sprinkle your basil. Voilà!
