Albondigas Soup

Albondigas soup is a traditional Mexican meatball soup (“albondigas” means “meatballs” in Spanish)
And I grew up on this delicious soup. Today seemed like a good day for me to cook it.

First, cut up your favorite veggies. What I picked was...carrots, celerey, zucchini, white corn (cut in halfs) potatoes, bok choy, onion and I threw in habanero chili's (optional, but recommended if you like it spicy). I keep my veggies thick and hearty...you pick how you like to cut.

ALBONDIGAS (MEATBALLS)
These are fun to make and so easy.
Lean ground beef, bread crumbs (plain), parsley, fresh minced garlic, and fine cut onion.
Mix all these ingredients in a bowl with one fresh egg and a little bit of oilve oil and lots of seasoning. I used cummin, salt and pepper.
Roll into cute little balls!

You must sear your meatballs before adding them to your boiling pot of cooking veggies.
This is so they don't fall apart once you add them. I sear them for a few mintues until they're browned and can hold themselves together.

Add your meatballs to your boiling pot and add chicken broth (I used "Simple Truth Organic" low sodium) box broth.

Serve with a lime wedge and enjoy!
